I Believe…

A little late with the 4th recap but whatever… For the 4th of July my boyfriend and I hosted a barbeque for a few of our friends. Highlighting just my plate of food, here’s what we made:

From top left, going clockwise, I had a fantastic green salad with all organic and extremely fresh greens, cucumbers, onions, and tomatoes with Natalie Rose‘s Liquid Gold Elixir dressing (so good!), Arabic potato salad (homemade by the half Arab himself, Boyfriend Sascha)

Adding in some protein, I had a lean mixed hamburger, (again homemade by boyfriend, with mixed in onions, seasonings, and fresh herbs) topped with stone ground mustard on a lettuce leaf with tomatoes, onions, and pickles (I’m Paleo, yo. No buns here.), and my absolute favorite, marinated grilled veggies: eggplants, zucchini, squash.

90% + of my plate came either from our garden, my mother’s garden, or our weekly local veggie box. You just cannot get any better than that!

Truly. Good. Food.

As for these little guys from yesterday, well they happily finished dehydrating and are ready for eating are being eaten as I type! They are so good! Gooey and moist on the inside, a tad bit crunchy on the outside. Finished product is definitely a healthy winner. Zucchini Drop Cookies. Mmmm.

One thing I would love to share with all of you today is a special blog post by a fantastic woman, role model, entrepreneur, and vegan bakery owner (my dream life!). Angela, from Oh She Glows, received an uplifting email from a reader of her blog all about having the courage to believe… believe in yourself and whatever may come your way. It’s truly inspiring. Angela wrote a few things that she believes in. Here are mine:

I believe I can do anything.
I believe in myself.
I believe being positive creates positive.
I believe tomorrow will always be better.
I believe I need to work on being and creating me more of the time.
I believe one action touches five other actions, make your one action count.

I believe I found my new favorite cookies (zucchini drop cookies!)
I believe I have found incredible, amazing, inspiring friends through blogging.
I believe yoga can heal all, physically, mentally, and socially.
I believe I am blessed to know healthy living.
