Life’s Essentials: Almost Raw Trail Mix Balls

Last night I did some much needed quality time with my kitchen… and my blender… and my food processor. Ah, how I’ve missed you my friends.

Anyway, since we have a TON of veggies to get through via our CSA veggie box, there was a kabocha squash literally calling my name, and I’m having a super special blogger meet-up (YAY!!!!) this weekend, the time had come to create some food magic.

Dinner:

Because this is one of my absolute favorite dishes, and I had all the ingredients, I washed, chopped, sliced, seasoned, and baked my Root Veggie Bake. The Savory “Creme” Sauce makes the dish, so of course that was included. (Recipe also adapted from Pure2Raw‘s dish here and SO good)

With the oven at 400 degrees, the kabocha, brussel sprouts, carrots, sparkler radishes got a drizzle of extra virgin olive oil, a splash of apple cider vinegar, and sea salt, and then baked for about 40 minutes.

A tri-tip roast was also made (thanks, Mama Samaan!) with a Cajun Rub, chard on the outside, and baked to perfection.

End result… DELICIOUSNESS.

Dessert:

What meal is ever complete without dessert? Really, what meal? And what blogger meet-up would be complete without some raw treats as a gift? Lucky, lucky you, Mystery Blogger. ๐Ÿ˜‰

So good. I missed making raw foods. And I missed my food processor. And I also missed the wonderful flavor and texture of a good raw cookie… um, or ball.

The Raw Choco-conut Fudgey Brownie-Baby. Pure2Raw twins and Katie, you are a genius. Dessert ball number one included cashews, unsweetened dried coconut chips, dates, vanilla extract, raw cacao powder, carob powder, coconut oil, and salt. Processed until they all get incredibly comfy with each other and rolled into balls.

Dessert ball number two was a mixture of Lori Genius (because I want to be one too) and other genius, Kristen from Kristen’s Raw, recipe for Heavenly Cookies found here. The recipe I came up with went a little something like this…

Almost Raw Trail Mix Balls (I honestly could not come up with a better name…)

Ingredients:

  • 1 cup nut butter (I used raw almond)
  • 1 cup unsweetened dried coconut chips or shredded coconut
  • 1/2 cup raisins
  • 1/2 cup oats
  • 1/4 cup carob chips
  • 2 tbsp yacon syrup (or agave syrup)
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 25 drops (approximately) Liquid Stevia
  • cinnamon

Easy as measuring all ingredients into a bowl and mixing. Ball form is optional but fun to eat. ๐Ÿ˜‰ Store in the fridge or freezer as they tend to get melty at room temp.

See every meal needs a dessert. ๐Ÿ˜‰

  2. OMG those roasted veggies look incredible. A cream sauce alongside would be to die for, I HAVE to try that.
    And raw dough balls are amazing. I haven’t made any in a while (my magic bullet is NOT happy when I try to make them with it) but I think I’m in need of some asap!

    Hope the blogger meet-up was awesome. I’ve never had one before but maybe sometime soon! There seems to be a few bloggers around my area cropping up lately, which is pretty darn neat.

  3. So much delicious-looking food! Cool to read of your trip to visit your folks also. I’m about to do that – first to the in-laws in Oregon – we’re leaving tomorrow! – and then further afield to see my parents, brothers and new niece! I expect I’ll fix a lot of food when visiting my folks but have to stay out of my mil’s kitchen, so have been frantically preparing as much as I can to bring with me so I don’t get as sick as when I usually go there! They live on a farm, so when I’m not going into town to get online and work, I’ll probably be harvesting nuts, drying pears, making cider, etc…

  4. I did have a blogger meet-up! First time we went out to a pub, and ate ice cream and other deliciousness…second time we trained together. Pretty fun stuff.

    I have been daydreaming all morning about roasted veggies for dinner, which is pretty much what I do all day long everyday, yes. But, I was at a loss at to the sauce I wanted to use….Lori to the rescue. That meal has my name ALL. OVER. IT. And I’ll be eating it while watching Elf. Again. ๐Ÿ™‚

  6. I love fudge babies! I have yet to make any without chocolate, but maybe someday I’ll tire of chocolate and try the trail mix ones. Oh wait, I’ll never tire of chocolate!

    I met up with a blogger I’ve admired for years, Sara Jenssen of Happy Foody and Walk Slowly, Live Wildly when she was in TX in the spring. She did a photo session with our family and took some amazing shots. It was so cool to see someone in person that you’ve read about for so long.
