Bet you wish you were my neighbor.
Last night I did some much needed quality time with my kitchen… and my blender… and my food processor. Ah, how I’ve missed you my friends.
Anyway, since we have a TON of veggies to get through via our CSA veggie box, there was a kabocha squash literally calling my name, and I’m having a super special blogger meet-up (YAY!!!!) this weekend, the time had come to create some food magic.
Dinner:
Because this is one of my absolute favorite dishes, and I had all the ingredients, I washed, chopped, sliced, seasoned, and baked my Root Veggie Bake. The Savory “Creme” Sauce makes the dish, so of course that was included. (Recipe also adapted from Pure2Raw‘s dish here and SO good)
With the oven at 400 degrees, the kabocha, brussel sprouts, carrots, sparkler radishes got a drizzle of extra virgin olive oil, a splash of apple cider vinegar, and sea salt, and then baked for about 40 minutes.
A tri-tip roast was also made (thanks, Mama Samaan!) with a Cajun Rub, chard on the outside, and baked to perfection.
End result… DELICIOUSNESS.

What meal is ever complete without dessert? Really, what meal? And what blogger meet-up would be complete without some raw treats as a gift? Lucky, lucky you, Mystery Blogger.
So good. I missed making raw foods. And I missed my food processor. And I also missed the wonderful flavor and texture of a good raw cookie… um, or ball.
The Raw Choco-conut Fudgey Brownie-Baby. Pure2Raw twins and Katie, you are a genius. Dessert ball number one included cashews, unsweetened dried coconut chips, dates, vanilla extract, raw cacao powder, carob powder, coconut oil, and salt. Processed until they all get incredibly comfy with each other and rolled into balls.
Dessert ball number two was a mixture of Lori Genius (because I want to be one too) and other genius, Kristen from Kristen’s Raw, recipe for Heavenly Cookies found here. The recipe I came up with went a little something like this…
Almost Raw Trail Mix Balls (I honestly could not come up with a better name…)
Ingredients:
- 1 cup nut butter (I used raw almond)
- 1 cup unsweetened dried coconut chips or shredded coconut
- 1/2 cup raisins
- 1/2 cup oats
- 1/4 cup carob chips
- 2 tbsp yacon syrup (or agave syrup)
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- 25 drops (approximately) Liquid Stevia
- cinnamon
Easy as measuring all ingredients into a bowl and mixing. Ball form is optional but fun to eat. Store in the fridge or freezer as they tend to get melty at room temp.
