If You Give A Mouse A Cookie…

He’ll ask for a glass of milk.

If you give a sweets-fiend-blogger a cookie…

She’ll probably ask what’s in it and then make her own… After she eats the cookie you presented her; because that would just be rude. And a sad waste of a cookie. πŸ˜‰

Green Speckled Mint Chocolate Chip Cookies adapted from Katie’s recipes here and here

Ingredients:

  • 1/2 chocolate chips
  • 2 cups gluten free flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup brown sugar
  • 6 tablespoons maple syrup
  • 10 drops(ish) liquid Stevia (or alternative sweetener equaling about 1/2 cup)
  • 2 tsp peppermint extract
  • 2 tsp vanilla extract
  • 1/4 cup applesauce
  • 1/4 cup almond milk
  • 1 tsp Spirulina powder (optional for the green speckles)

Directions:

Set the Spriulina powder aside. Mix the dry ingredients together. Mix the wet ingredients in a separate bowl. Add the dry to the wet and stir in chocolate chips. Sprinkle Spriulina onto the cookie dough and briefly stir- creating swirls (??).

Compile your unbaked cookies on a baking sheet and bake at 350 degrees for 8-10 minutes.

Eat and enjoy.

Even if they look like they’re moldy, not green swirled or speckled. They’re still good. πŸ™‚

  1. My kids love that book! And it always makes me want cookies.

    I’m getting more adventurous in my eating, but I’m also selective. Is that totally contradictory?

  9. These look wonderful! I would ask what’s in it since a lot of cookies aren’t vegan. I am a picky eater, especially since switching to a high-raw vegan diet. I try not to make a big deal of it when eating out, but it’s tough for parties and holiday gatherings.

  10. So you took out the butter/margarine and used applesauce and it was fine? I was thinking about doing that, but I wasn’t sure if the marg was what was helping with the spread factor. Good to know, good to know…

    funnily enough, i was thinking about the whole “picky eater” thing earlier today. are you considered a picky eater if you’re trying to eat healthy?? i’ve always thought a picky eater was more about not eating vegetables than not eating fried foods. yet i often get grief about that. sigh….:)

    (btw, your cookies look delish. i’d be all over that. πŸ™‚ )
