With two cups of coffee down, caffeine pumping readily through my veins, the rumbling of hunger in my stomach, and all of my creative juices following and focused on one thing, I went to work on my mission…
In all of the choices we are faced with breakfast fare, I wanted something sweet, yet savory. Fun and sophisticated. I wanted something original and beautiful. After endless blog recipe searching and taking inspiration from a few sources, I finally decided on a mashup of the following dishes:
- Christina‘s Super Sweet Potato Hummus
- Lori and Michelle‘s Almond Butter Fig Flatbread
- Angela‘s Peanut Butter, Jam, & Banana Breakfast Pizza
You probably still have no idea how these three recipes are related so I’ll just show you.
Orange-Honey Hummus & Pear-Kissed Flatbread
Socca (adapted from this Pure2Raw recipe)
- 1 cup garbanzo bean flour
- 1 cup water
- 1 tsp salt
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1 tbsp + 2 tbsp coconut oil
Whisk together the garbanzo bean flour, water, salt, cinnamon and 1 tbsp melted coconut oil.
Place the remaining 2 tbsp coconut oil in a 10 inch spring form pan into a 400 degree oven. Heat the oil for a few minutes, until melted (about 1-2 minutes) then pour the socca batter into the pan. Baked for approximately 25 minutes.
While the socca is baking, prepare the Orange-Honey Hummus.
Sweet Orange-Honey Hummus (adapted from this Hungry Meets Healthy recipe)
- 1 cup cooked chickpeas
- 1/4 orange juice
- 1 tbsp orange blossom honey (or obviously, regular honey)
- 3 tsp tahini
- 2 tsp cinnamon
- 1/4 tsp sea salt
Blend all ingredients in a blender or food processor, until smooth(ish). Set aside.
Put it all together (adapted from this Oh She Glows recipe. Plus, it just looks so good.)
Cut pears, or other fruit, into uniform slices. Place baked flatbread on a plate, top with sweet hummus, and fan fruit across the hummus.
Sprinkle with cinnamon…
And top with pomegranate seeds.
Then devour (if you’re not afraid to cut into it like I was)!
