Basil Banana [Protein] Pancakes

Breakfast is the most important meal of the day. And most of the time I find myself drinking my green smoothie after my morning workout, sitting at my desk, wishing I had something warm to chew. At least since it’s been so cold outside.

I don’t know about you but when the weekend comes, I’m up early working on some fun meal item to curb my carb/protein/fat/warm/fun breakfast cravings. And the added chia seeds give it a little bit of crunch. Yum!

So when you get some free morning time (heck, when you get any free time) makes these. My boyfriend, who is, most of the time, reluctant to try my “weird” foods, really liked these. To be completely honest, I do eat weird foods. I actually enjoy coming up with the most bizarre combo of things I can… but basil and banana are two things that belong together.

They are easy to make, combine everyday ingredients, are gluten-free, sugar-free, dairy-free, soy-free, and definitely hit the spot.

Basil Banana Protein Pancakes

[gluten, dairy, sugar, and soy free wonders]

  • 1 small banana
  • 18 g fresh basil leaves (approx. 2/3 cup packed)
  • 1/2 cup egg whites (or 1-2 eggs)
  • 1/4 cup oats
  • 38 g protein powder (2 scoops of Life’s Basics Greens Plant Protein)
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • few drops of liquid Stevia (or 1 tsp sweetener- honey would be good)
  • 1/2 tsp chia seeds (optional)

In a blender, combine all ingredients except for chia seeds, until smooth. Stir in the chia seeds. Pour batter into a heated and coconut oil greased skillet, flipping once.

Plate and top with a drizzle of honey, tahini, and more chia seeds. 🙂

These green and good Basil Banana Pancakes had a wonderful taste, a little bit of freshness from the basil and sweetness from the banana really did create the perfect morning fuel. And fuel I needed.

I chopped ALL of this wood. Myself. With an axe. And it felt good to accomplish something so… weird. This is also our way of warmth living in the Santa Cruz Mountains so it was necessary, too.  🙂

  3. Did you know it was national pancake day 🙂 Awesome! I’ve never thought to add basil…so unique! Something new I will accomplish this week is starting my workout on a monday and lasting all week (hopefully!)

  6. BRILLIANT! I adore using rosemary in sweet things but haven’t ever used basil (probably because I have rosemary and not basil in the garden 😛 ) These look magnificent!!

    And here is your fellow ‘weird-food-eating’ friend to say that those nana pancakes sound so good! My husband has a very strong sense of what foods ‘should’ go together and he’s a trooper putting up with some of my efforts–mostly I ‘shield’ him, though.

    I went through a phase of being addicted to bananas with my guacamole, extra spicy!

    Had my birthday this last day, food yum pics to come on blog, but despite the distraction, I’m committing to decluttering and recombobulating!

  10. The bf doesn’t know how good he has it. You should make extras of these and then freeze them. Then you can have them all week long at the office.

    accomplishment for the weekend = making gluten free muffins that didn’t fall apart 🙂
