Holiday “Butterscotch” Granola
I was in a mood for granola the other day. I wanted something crunchy and filling to top my green smoothies. I also had a lack of ingredients to choose from so I went with what I had. The finished product was worthy of blogging with taste, easy, and that crunch that I was looking for.
This granola is really great on top of the Greek yogurt and Customized Cranberry Sauce recipe that is posted here. The butterscotch flavor comes from the combination of spices and it tastes similar, but not exact, like butterscotch. Try it and adjust the flavors based on your taste preferences!
Holiday “Butterscotch” Granola
- 1 cup unsweetened shredded coconut
- 1 cup rolled oats
- 1/2 cup raw honey
- 1 1/2 tsp vanilla extract
- 2 tbsp vanilla coffee creamer (soy, coconut, whole milk, or regular cream)
- 1 tsp cinnamon
- 1/2 tsp cardamom
- 1/2 tsp ginger powder
- 3 tbsp flax seeds or sesame seeds
- 2 tbsp dried wild blueberries, cherries, or diced figs
Preheat oven to 250 degrees. Mix the honey, vanilla, creamer, cinnamon, cardamom, ginger, and seeds in a large bowl. When honey is somewhat combined and thinned, add the coconut and oats. Fold in dried fruit.
Spread granola evenly onto a glass Pyrex dish or parchment-lined baking sheet. Bake granola for 7 to 10 minutes, or until granola turns golden brown, stirring as needed for even baking.
