Fig Dark & Stormy with Rum + Pineapple Salsa
The weekend is so close I can almost taste it… and this week it tastes like rum!
This rum-based drink boasts rich fig preserves and ginger beer, with tangy lemon to balance the sweetness. This is the perfect drink for an afternoon sipping cocktail.
I’d highly recommend making this with dark rum, as opposed to spiced rum. And there is a difference! Spiced rum has added flavorings. Dark rum is just rum that’s been aged.
Get creative with this one by changing up the fig preserve. I can see raspberry or strawberry preserve suiting this drink quite nicely.
Since rum always makes me think of summer, tiki parties, and beach hangouts, what better thing to partner with a rum cocktail than pineapple salsa?
Paired with our Dark & Stormy’s, we cored a pineapple, filled it with sweet and spicy bits, and thew it all back into the pineapple shell for a fun way to dip and sip. Here’s the recipe we used!

Fig Dark & Stormy
- 2 oz dark rum not spiced rum
- 1 tbsp fig preserves
- ½ lemon juiced
- 3 oz ginger beer
- Place rum, fig preserve, and lemon into a shaker with no ice.
- Shake to combine then pour into a glass filled with ice.
- Top with 3 oz ginger beer and enjoy!
