Winner, Winner, (and) Raw Food Dinner

What Runs Lori is one year old (and 2 days). It’s my celebration but you benefit! I had quite a full weekend, so I apologize for not posting the Blogiversary winner yesterday. But you get to find out today (and find out what I ate, did, etc… since you were all wondering).

Who watched the World Cup game Saturday? USA vs. Ghana. Let’s just say USA did not win. But it was still a decent game and it was fun to watch with other fans! And showing some US pride… I hope you’re ready for a seriously ridiculous photo session.

Again with the game face???

Anyway…

My sister came to visit this weekend, also, so of course, she asks for a “yummy raw food dinner”, and who am I to deny her? Searching the refrigerator, we had TONS of vegetables, kelp noodles, almond butter, Tamari (wheat-free soy sauce), and toasted sesame seed oil… well, that just screams raw Pad Thai, doesn’t it?

This was delicious! And the recipe came from Ani Phyo‘s new uncook book, Ani’s Raw Food Essentials. Great book for anyone new to the raw food world of “cooking” and anyone looking for easy to make and tasty recipes. This recipe book is similar to her other books but has a few different recipes that are delicious!

Kelp noodle Pad Thai with a drizzle of plum sauce on a bed of fresh red leaf lettuce. (I think my sister wants me to become her personal chef…) Every time she comes, it’s feasting time. 😉

And, but of course, I had to make green smoothies for breakfast. This variation was so happily copied from Katie of Making Food And Other Stuff, who is the master of beet baking, roasting, grilling, blending, and eating (by the way, Katie makes some killer salads!). She loaned me a recipe of using beets in a smoothie and I gladly accepted.

My Spicy Choco-Beet Smoothie contained 1 raw beet, fresh beet greens (leafy tops), handful fresh lettuce, 1/2 a cucumber, 1 frozen banana, 1 cup almond milk, 1 tbsp chia seeds, dash of vanilla extract, cinnamon, cayenne pepper, chili powder, pinch of salt, and a few drops of chocolate liquid Stevia. Blended to perfection with lots of ice.

    Beets, lettuce, celery, spinach, knob of fresh ginger, cottage cheese, frozen tart cherries, cocoa powder, and the same spices. It tastes great! great idea!

    Glad you like the smoothie – I am drinking one right now. I really can’t get enough of the beet lemon and ginger combo. I added spinach and strawberries this time. SO GOOD. I am hooked.
