Bison Meatballs!

This weekend, while relaxing on the solo, I had a craving for meatballs. No idea why, but they sounded really good.

Um… not those meatballs.

…Those meatballs!

I wanted some hearty, meaty, um… meatballs. Being that I am not a huge fan of red meat, and the sound of a juicy beef steak doesn’t really, ever, appeal to me, I decided on a new flavor.

Bison Meatballs

  • 1/2 lb ground bison
  • 1/4 lb ground lamb
  • 1 egg
  • 1/2 red onion, diced
  • 1 clove garlic, crushed
  • 2 green onions, thinly sliced, about 1-2 tbsp
  • 1 tbsp Worcestershire sauce
  • 2 tsp Tamari or soy sauce
  • good sized squirt sriracha sauce (<–technical term)
  • 1/2 tsp garlic powder
  • salt
  • pepper
  • cayenne pepper
  • paprika

Mix all ingredients together with gloved hands (ew, I can’t touch raw meat…) and form into round, meatball shapes. If needed, place in the refrigerator for a half hour to help with forming.

Bake at 400 degrees for 20-25 minutes, turning once if desired.

While these bad boys were baking I threw together a new creation…

Spicy Cilantro Cucumber Taziki Sauce

  • 1 cup nonfat Greek yogurt
  • 1/2 cup chopped cilantro
  • 1/2-1 clove garlic, crushed
  • 2 tbsp lemon juice
  • 1 cucumber, diced
  • chopped red peppers (optional)
  • salt and pepper

Again, mix all ingredients together and serve over meatballs. 🙂 EASY.

There you have it. A tasty, healthy, protein filled, and super good recipe. Don’t say I never gave you anything. 😉

  2. Tzatziki and meatballs together – sounds great! Not sure if my husband (who is the meat eater would go for the tzatziki, though. But I love that stuff. When I lived in CA and had more access to cukes, I used to make it quite a bit (making a nut yogurt since I can’t do dairy).

    When I’ve made meatballs for Phil (my husband) I’ve usually used breadcrumbs to hold it together. It’s really great to see that that’s not always necessary.

  3. Oh, I almost forgot – I thought your cookies were awesome! Like you, I liked the no bakes best, but I am a no bake cookie fiend. But the other ones were quite flavorful and tasty too. I’ve been eating cookies for breakfast – they’re healthy ones right? 🙂

  4. Um, okay, yum. I so love that you used bison for these. The lamb/bison combo is kind of like the yuppy version of the very Italian pork/beef meatball combo. You are so cool.

  5. I hate touching raw meat too. Just the though makes my skin crawl. I’m impressed! And bison…so good. I’ve never tried lamb though.

    I was going to make a joke and say that you’ve never given me anything, but I really can’t say that! It would have been funny though, right?
