Crustless Pumpkin Pie & Who’s The Winner Now?
I know that I am Lucky Lori but there can be room for another winner in my circle. Is it you? Maybe… but first, a little suspense.
Remember how lucky I was (how could anyone forget, I keep reminding you…)?
I was chomping at the bit to find something to make with this guy. After careful consideration, and lack of ingredients for other recipes, I went with something easy, but definitely not lacking deliciousness.
Crustless Yam Custard Pie, mine altered to be Crustless Pumpkin Custard Pie. I could go on and on about how great this tasted, or how easy it was, or how healthy it is for you, but I’ll just leave it at, sooooooo good.
Ingredients:
- 2 cups canned (or freshly baked) pumpkin
- 3 eggs
- 3 Tbsp Date Syrup
- 1 teaspoon cinnamon
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon himalayan salt
- 10 drops stevia
Preheat the oven to 375 F.
Blend all ingredients in a blender until smooth and creamy.
Lightly oil 3 ramekins with melted coconut oil or oil spray.
Pour the mixture into the ramekins and bake for 25-35 minutes.

mmmm we are so similar.. even with the little pumpkin pie tarts i made, i just scooped the filling out and at that as is, crustless pumpkin pie all the way!!
ps. yes we totally will meet one day. and if u decided to make muffin with the date syrup that would be SO INSANELY YUMMY! i need to find me some, the idea would taste fantastic! <3

I finally was able to find a spaghetti squash after months of waiting and used it to make your vegan cheesy bake thing. omg soooooooo good. I used brocc and asparagus instead of peas but followed your recipe to a tee other than that. delicious and simple, I love it. The only bad thing was my oven totally overheated and the glass pan I was using to roast the squash exploded everywhere, thank goodness I was able to save the squash!
Love it!! I used to hate the crust of pies…my older sister used to make a special pie for me that was crustless!! Love this recipe!
And I plan to call you tomorrow!!!

That custard looks yummy – and I bet the date syrup was a great extra nuance.
Love that you’ve learned to split wood! That’s a cool thing to be able to do. My husband loves to do that for ages on end – he taught me how to do it and I’m not nearly as good and don’t love it so much either.
Phil drove that excavator! He loves to do stuff himself and grew up driving tractors, combines, etc, on the farm, so not too different. His daughter’s partner is a pro, and coached him a bit.
