Rescuing Monday: Vegan Cookie Dough Ricotta
Happy Monday, Friends! I hope you had a restful weekend. I think I caught up on sleep with my wild and crazy Saturday night consisting of 2 glasses of wine with dinner and me passing out falling sleeping at 7:45 pm. I’m a rockstar, I tell ya. That’s what happens when you don’t drink often… sadly. I also slept until 7 the next day, so I suppose my body really did need the rest. Muscle growth and such, right?? 😉
Anyway, since it is Monday and my coffee is not yet ready, what better way to settle into the week than to start with dessert? Dessert to the rescue?!
I don’t think there is a better way to start the week. Especially since this dessert is packed with protein and loaded with NO sugar. Healthy desserts are my specialty. And most of the time they taste good. 😉
Vegan Cookie Dough Ricotta
[vegan, sugar free, gluten free, guilt free, and could not be easier]
“Don’t-Try-This-At-Home” Cookie Dough + Tofu
See, easy.
Ok, to be a little more specific, here is exactly what’s included:
- 15 oz
black beanschickpeas - 1/2 cup tofu
- 1/4 cup tahini
- 1 tbsp vanilla extract
- 1 tsp cinnamon (optional)
- 1/8 tsp salt (or 1/4 tsp salt if using unsalted beans)
- 2 tsp honey
- 25 (or so) drops Vanilla Creme liquid Stevia (or 1/4 cup liquid sweetener, maple syrup, more honey, agave, etc.)
- Enjoy Life chocolate chips (gluten free, dairy free, vegan chips)
Blend everything together in a food processor or blender, until smooth. Stir in chocolate chips and serve.
This “cookie dough” really does have the texture, taste, and lightness of ricotta cheese but without the dairy- and of course, adding in chocolate chips and tahini just improves.
And why stop at cookie dough?
Of course, we need to have a balanced breakfast, so we add a mug of Superhero coffee (or tea, pictured) and vegan oatmeal-walnut chocolate chip cookies (recipe is being developed). It’s all about balance in life… and rescuing Monday! I love my new mug in every way possible. It makes me smile. 🙂
And of course, this isn’t really what I had for breakfast, but it’s fun to live vicariously through a pretend morning blog meal. If I write it, it’s kinda like a calorie free meal, right? Actually, since I really do eat everything I make, it’s more like a second helping…?

and, to be honest, i have no idea how i balance everything! i work everything around work, basically. work is the little blip in life that everything else (exercise, social life, living in my kitchen) happens to revolve around but i don’t let work ever take over. the best place for me to find balance though is on my yoga mat. per usual 🙂

I schedule everything in. My workouts are scheduled, my ‘hang out’ time is scheduled, classes are of course scheduled…and I’m not working right now =( BUT I’m taking the times that I used to be scheduled to work to look for a new job. 🙂

hahah I really did think you were serious when you said you ate cookie dough for breakfast! I know from past experiences that when I start my day off with something like that I don’t eat the healthiest the rest of the day…
back in December I remember having a 2 huge slices of godiva chocolate cake for breakfast which led me to overeat and indulge the rest of the day b/c I wanted to! =/
