The Best Ever Vegan & Gluten Free Chocolate Cupcakes
Do vegan cupcakes really have the ability to take over the world? (note: I didn’t use any of these recipes but it was a good way to intro the post, right?)
Probably not yet, but they sure as hell should.
Why, you ask? (pretend you asked…)
Because they’re Yummy… with a capital Y.
And because they’re easy to make, they’re virtually guilt-less, and you can eat all of the… take heaping spoonfuls of… enjoy a tasty raw batter since there’s no egg, dairy, or gluten!
You see, I’ve mastered the art of vegan baking. Really… The key to making successfully fluffy and tasty cupcakes is starting with a good base. Then mixing with love. Baking to perfection. And piping chocolate frosting all over the cooled cakes in cups.
And by starting with a good base, I mean secretly using a gluten free chocolate cake mix. But shhhhhhh! It’s our little secret.
Topping with red ripe strawberries are optional. Sort of.
The Best Ever Vegan and Gluten Free Chocolate Cupcakes
[if you don’t tell, they won’t know]
- 1 package gluten free chocolate cake mix
- 1/2 c dairy free butter
- 1 cup almond milk
- 1 tbsp fresh lemon juice
- 2 flax eggs
- 1/3 cup hot water (110 degrees)
- 2 tsp vanilla extract
- people to share in the cupcake love (’cause this makes a lot)
Mix and bake according to Bob‘s directions. Let cool and frost.
Now, I wanted to make my own vegan frosting for these but ran out of time, as these cupcakes were for a family dinner in celebration of my boyfriend’s birthday this weekend. So, a Whole Foods vegan chocolate frosting it was. Still yummy, just not as yummy as homemade would have been. 😉
To pipe the frosting, I recommend stealing borrowing your mom’s piping tools then just playing around. That’s what I did and they turned out to be the most ugly and beautiful cupcakes created… in my world. Professional, no. Fun to make and delicious to eat, yes.
These turned out moist, super fluffy yet slightly dense, a bit crumbly when biting and definitely worth making again.
Have you ever tried a gluten-free baking mix? I had my doubts… but when just the gluten-free flour was the same price as the whole cake mix (same brands!) my decision was made for me.
Ah, and you almost left without my good news! Fun and wonderful news, actually…

I started personal training last week! I LOVE it. I make people sweat… and for a brief time, enjoy exercising (hopefully). How rewarding is that?!

Haha! When I first started reading this post knowing that you’d share your news today, I thought you had started a little bakery or something! I’d definitely pay for a bit of those gorgeous little gems! I bought a cake decorating kit thingy from Pampered Chef years ago, but the only time I’ve ever used it was to pipe deviled egg filling…I really need to play around with it! Maybe I’ll do some baking on Sunday and then force all my coworkers to eat them on Monday! 😉 Plus, the bigger they get…the smaller I look! Muhahahaha!

I’m kind of a snob about making things from scratch, but if the mix didn’t have any weird ingredients and was the same price as the flour, I would sure be tempted too!
