The What Runs Lori Theme Song with a rift of Tomato, Parsley, & Cauliflower Salad
Happy Wednesday! We’ve made it this far in the week and we’ve got only a few more days of adventure until the weekend! I’m wishing and hoping for sun. 🙂
It’s already day 11 of the HAWMC and I’m still going strong with 30 posts in 30 days. Woo hoo! It’s harder than you think to post every day and have a full-time job, workout, and eating schedule. 😉 But it’s also super fun and pretty insightful to write using the prompts given. I’m learning more about myself with each prompt and post. If you have time, try going back and looking at the prompts and maybe write a few words of your own on each.
So Day 11’s prompt is Theme Songs. Your health focus or blog is getting it’s very own theme song! Congrats! Now… what is it? What are the lyrics? What type of music is it?
I’m not feeling terribly creative today and am going with a song I’m loving. I feel as though it’s either loved or hated but I think it’s inspirational and super fun. Oh wait, that’s the name of the band…

Sure, this song is about drinking (if you read the rest of the lyrics or hear the song), but it’s also about being empowered, fearless, and taking on the world! And I love hearing words that motivate to that degree.
Know what else I like? Healthy, delicious, What Runs Lori fuel. And today’s recipe is not only filled with flavor and fiber, but it’s filled with new ingredient combos (at least for me). It’s a bit interesting but it’s SO GOOD.
Tomato, Parsley, & Cauliflower Salad
- 1 large head cauliflower, chopped into small pieces
- 2 tbsp olive oil
- 2 anchovy fillets, roughly chopped
- 1 large clove garlic, crushed
- 2 tbsp lemon juice
- 2 medium tomatoes, diced
- 1/2 English cucumber, sliced
- 1/2 cup fresh parsley, chopped
- 1 tsp salt (+ more if needed for flavoring to your liking)
- black pepper, freshly ground is best
Directions:
After preparing all of your ingredients (chopped, sliced, ready to mix), heat olive oil in a large pan. Add the anchovy fillets stirring constantly for 2 minutes (so not to burn). Add in the cauliflower and heat for 5 minutes, or until cauliflower is slightly tender, stirring often.
Meanwhile, combine the remaining ingredients into a large bowl: garlic, lemon juice, tomatoes, cucumber, parsley, salt and pepper. Mix well and add in the cauliflower. Toss to coat and serve warm or chilled.
This is a great recipe to eat either hot or cold, but fresh from the pan and mixed is best. The flavors are brilliant and delicious together.
