Insanely Fit Mole Chicken & Spicy Lemon-Lime Salad Dressing
I had an absolutely INSANE workout yesterday.
Probably because I am on month 2 of BeachBody.com’s Insanity workouts, but still… it was Insane.
Let’s just say that the first month of 35-40 minute DVDs left my calves sore and my body dripping in cleansing sweat. Mmmmm… way more information than you wanted, I’m sure.
Now that I’m on month 2, figuring that since I adapted pretty quickly to the first month of tuck jumps, push ups, burpees (aka Suicides), high knees, and diamond jumps (oh yes, all as fun as they sound…), that month 2 would be a breeze.
Ooooh was I sadly mistaken.
Sadly.
And sorely.
But! I will prevail and I WILL conquer you, Insanity. All 60 days worth.
I’ve gotta say though, for anyone who has done the Insanity 60 days, I now know your pain and I now know that it’s seriously not a joke. Those workouts are TOUGH.
Aaaaaaaaaaaaanyway…
After my drenching workout, I went to work on refueling my body. In the kitchen we go!
With a lot of **pre-prepared foods for the Insanity “diet” program, I whipped up a meal in minutes. Already portioned chicken, a tub of Greek yogurt, some veggies, spices, and wa-la! A meal fit for a fat-burnin’ beast!
**Not to be confused with purchased foods… I don’t roll like that.
Insanely Fit Mole Chicken & Spicy Lemon-Lime Salad Dressing
Serves 2
- 8 oz. chicken breast, baked and chopped
- 1 large sweet white onion, sliced
- 1 large zucchini, sliced into rounds
- 1 cup non-fat Greek yogurt
- 1 tbsp raw cacao powder, or unsweetened cocoa powder
- 1/2 tsp paprika and chili powder
- 1/4 tsp garlic powder
- salt & pepper, to taste
- 1/2 cup cilantro, roughly chopped
Directions:
In a medium, non-stick pan, heat sliced onions and sliced zucchini until soft, no non-stick pan, add 1 tbsp olive oil (or add water, as needed).
Meanwhile, in a bowl, add the remaining ingredients, with chicken cut into small pieces. Season with salt, pepper, paprika, garlic powder, and chili powder, more or less to your liking.
When onions are soft, combine the onions and zucchini with chicken and yogurt mixture. Top with chopped cilantro on top.
Spicy Lemon-Lime Salad & Dressing
- 1 tbsp olive oil
- 1/4 cup fresh lemon juice
- juice from 1/2 lime (about 2 tbsp)
- 1/2 tsp paprika
- 1 tbsp nutritional yeast (optional)
- about 1/2 tsp salt & freshly ground pepper
- thinly sliced sweet white onion
- 1 tomato, chopped or sliced
- 1/2 cucumber, thinly sliced into rounds
- oven baked kabocha (optional but sooooo good)
- 3 cups mixed greens
Directions:
In a large bowl, combine the olive oil, lemon and lime juice, paprika, nutritional yeast, if using, and pepper, and onions. Skip the salt for now.. Toss all to combine and let sit while you prepare the remaining ingredients.
Add in the onion, tomato, and cucumber, tossing to coat with dressing. Again, let sit.
*Tip: the longer you let the dressing sit and the onions marinade, the more fantastic it will be. Trust me. The onions become softer and soak up the flavors.
When you’re ready to eat, add the kabocha, if using, and mixed greens. Sprinkle lettuce leaves with salt and toss again.
Serve!
To make this extra spicy, add in chili powder, crushed red chili pepper flakes, or hot Sriracha sauce.

Oh you are one tough lady! I did month 1, looked at the month 2 schedule, and bagged it 🙂 Maybe I’ll try again one day, but month 1 was so not fun for me that I couldn’t imagine an even longer version of those workouts!

I’m really impressed that you’ve made it into month two of Insanity workouts, great job! I did a little P90X with my husband and those are good workouts, I imagine the Insanity ones take it up a notch. Raw cacao powder is an ingredient I haven’t yet tried, I’ll bet it’s good in this mole!
