Strawberry Peppermint Avocado Ice Cream (Paleo!)

With Valentine’s Day right around the corner and love filling the air, I thought we would take advantage of a few February favorites to get you in that loving mood.

This recipe includes a lot of my favorites. Avocado. Cacao. Peppermint Essential Oil. Enjoy Life brand NEW Dark Chocolate Morsels. Ah, nothing could be better than pulling all these things together in perfect unison.

Let’s do a quick breakdown of the lovable, favorite ingredients:

Peppermint Essential Oil: The Oil of a Buoyant Heart.  A beautiful steam distilled oil from the flowering tops of the plant that is grown in the United States, 1000000% pure peppermint. Peppermint is often used to improve mental alertness and acuity. Apply Peppermint to the back of the neck to help relieve stress and tension. It can be applied to the temples to relieve headache. When applied to the bottom of the feet, Peppermint creates a cooling sensation and may help to reduce fever.  Its aroma is uplifting and invigorating and when used topically can be soothing to tired, sore muscles.  Its cooling sensation is perfect for fresh breath and opening the sinuses and airways! PLUS, it’s delicious!

Peppermint is also:



Avocado:  Tasty fruit, rich in monounsaturated fat that is easily burned for energy. Avocados contain healthy fats, fiber, potassium (more than twice the amount found in bananas!), Vitamin E, B-vitamins, Folic Acid. The’re anti-inflammatory, protect against liver damage, and can improve lipid profiles.

Cacao: Chocolate in raw, bean form! Super bitter but wonderful and crunchy. These little guys are loaded with magneium, fiber, iron, Phenylethylamine (PEA – adrenal-related chemical that we produce when we’re excited), theobromine (gentle stimulant that dialates blood vessels) and a plethora of anti-oxidants. Cacao even helps to improve mood!

Enjoy Life Dark Chocolate Morsels: New packaged greatness from Enjoy Life brand. These new dark chocolate morsels are 69% cacao, dairy, soy and gluten-free. There are only TWO ingredients that make up this product, which gets an A++ in my opinion!

Please note, it’s important to avoid Peppermint essential oils that may come from some of the high volume production processes that sacrifice quality and purity for inexpensive volume.  Low cost usually is not high quality. You NEVER want to ingest Peppermint that may have fillers, added chemicals, or may be made with contaminated peppermint leaves.
