I really wanted muffins and had plenty of ripe ban I really wanted muffins and had plenty of ripe bananas sitting on my counter just waiting for baking. So Banana Bread Buckwheat Rye Muffins were born! πŸ™ŒπŸΌ Wanna make your own? BANANA BUCKWHEAT RYE MUFFINS - 1 cup King Arthur Gluten-Free All-Purpose Flour - 1/2 cup buckwheat flour - 1/4 cup rye flour - 2 tsp baking powder - 1/4 tsp baking soda - 1/2 tsp salt - 1/2 tsp cinnamon - 4 tbsp (113g) butter, softened4 tbsp olive oil - 2/3 cup sugar (I used coconut and brown sugar mix) - 2 tbsp molasses or honey (I used 1 tbsp of each) - 2 large eggs - 1 1/2 cups (340g) mashed very ripe bananas - 1/2 cup chopped nuts or seeds (I used toasted pumpkin seeds and macadamia nuts) 🧁🍌🌰 Pre-heat oven to 375 F. Whisk together the flours through cinnamon and set aside. Beat together butter, olive oil, sugar, and molasses/honey. Whisk in eggs one at a time. Mash in bananas, leaving some bigger chunks. Fold in flour mixture and nuts/seeds, mixing until just combined. Scoop batter into greased muffin tins, filling to the top. Top with a sprinkle of coconut or brown sugar. Bake for 20-24 minutes, remove from oven, wait about 60 seconds until you can't wait any longer, then enjoy! #muffins #banana #bananamuffins #healthymuffins #homemade #bakingtime #banananut
