Lemon Chia Cake Batter Protein Pancakes
I’ve been tracking all of my calories lately. Tracking my macro nutrients and calories is a great way to make sure none of that unwanted holiday weight appears and helps make sure you’re eating enough to burn fat and add muscle… or at least it helps me think all that happens.
Either way, tracking my food intake helps keep me accountable for what I am eating. Just one handful of chocolate chips can turn into three if I’m not careful and just one spoonful of almond butter definitely becomes four heaping spoonfuls. It’s bad. But oh-so-good.
Since I track my food intake everyday I can see when I need to get more protein or more carbs and can allow some flexibility when I really want a handful of chocolate (or a cookie!).
When I did a quick search for protein pancakes to make the other day, and saw the beautiful work of Muy Delish and her Lemon Chia Seed Protein Pancakes, well, I just had to make them.
These pancakes fit my macros perfectly for a morning breakfast and definitely hit the spot in the craving department.
Once you bite into these and you’ll be hooked, just like me!
Lemon Chia Protein Pancake with MuscleEgg Cake Batter Eggs!
- 2 egg whites, I used Cake Batter MuscleEgg Egg Whites
- 1 scoop vanilla protein powder, I used Vega Sport
- 1/2-1 banana, approx. 65 grams
- 1 tsp chia seeds
- 1/4 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp lemon zest
- 1 tbsp fresh lemon juice
- 1 tbsp coconut flour
In a medium bowl, mash the banana with a fork. Add the egg whites, protein powder, chia seeds, vanilla, baking powder, lemon juice and zest and coconut flour (all remaining ingredients). Allow to sit for 5 minutes to plump up the chia seeds. 😉
Heat a small nonstick pan over medium/low and lightly coat with cooking spray or coconut oil.
Pour 1/4 cup of the batter onto the pan. Cook until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook about 1 minute more on the second side.
Top with a few lemon zest shavings and get to work enjoying!
