Paleo Chicken Taco Salad with Chimichurri Sauce

I often pick out my daily meals by way of cravings.
Sometimes these cravings are super elaborate and other times they’re pretty standard “throw things into bowl and eat” type meals.
Today’s recipe is one of those amazingly easy dishes that cleans out your fridge, is pretty simple, and tastes pretty damn good. Oh, and it’s as healthy as…. healthy gets?

And don’t we all love healthy, easy recipes? I know I do. As much as I love spending time in the kitchen cooking, baking, creating, I LOVE my easy-as-pie recipes that I can literally throw together in a bowl and chow down.
Plus, aaaaaaaaaaaaaaaaaaaaaaaaany recipe that has a sauce I can use gingerly drizzle onto drown my plate in is A-OK in my book!

Paleo Chicken Taco Salad with Chimichurri Sauce
Chimichurri Sauce adapted from The Whole Smith’s recipe.
- Leftover chicken breast, cooked and sliced
- lettuce, kale, shredded cabbage or other green of choice
- carrots, grated
- green onions, sliced
- tomatoes, sliced or diced
- Chimichurri Sauce (below)
- Salsa Verde, optional
- Tapatio Hot Sauce
- picked jalapenos, optional
Directions:
In a large bowl, toss in leafy greens, carrots, green onions, tomatoes and/or pickled jalapenos. Add as much chicken as you’d like. Top all with Chimichurri Sauce and any other sauces you’d like.
Eat.
Chimichurri Sauce
- 1 cup cilantro
- 1/4 cup parsley
- Β½ cup olive oil
- ΒΌ cup lime juice (about 2 limes)
- 1 tbsp honey
- 1 tsp cumin
- Β½ tsp chili powder
- 1 tsp red pepper flakes
- 2 tsp salt
Combine all ingredients in a blender or food processor and whirl until smooth. Taste and adjust salt, pepper, or any of the spices until you get the perfect Chimichurri sauce.
Easy.
Delicious.
