When I saw the photos for Paleo Leap’s Pork Stuffed Sweet Potatoes I knew I had to make it.
Imitation is the greatest form of flattery, isn’t it? So is being smart and finding a killer recipe in the first place!
I adjusted the seasonings a bit but followed this recipe pretty closely and it turned out amazing.
I mean, can you really go wrong slow cooking pork?!
I think not.
The end result of making this dish was filled and happy bellies and totally legit photos.

Paleo Pulled Pork Stuffed Sweet Potato
- 2 lbs boneless pork loin or pork butt
- 4 large sweet potatoes, washed
- 1 red onion, thinly sliced
- 2 green onions, thinly sliced
- 2 garlic cloves, minced
- 1/2 cup beef broth or stock
- 2 tsp chili powder
- 2 tsp paprika
- 1 tsp ground cumin
- ΒΌ cup apple cider vinegar
- 1 cup barbecue sauce
Directions:
In a small bowl, combine the chili powder, cumin, paprika, and salt and pepper to taste.
Rub the mixture evenly over the pork then place into slow cooker, along with the onion, garlic, beef broth, barbecue sauce and apple cider vinegar.
Cover and cook on low for 6-8 hours.
Preheat your oven to 400 F.
Place sweet potatoes onto a tin foil lined baking sheet and into the oven for 45 minutes, or until sweet potatoes are tinder when poked with a fork.
Once your pork has finished cooking, use two forks to pull apart the meat.
Slice each sweet potato down the middle and fill each sweet potato with the pulled pork.
Sprinkle with green onions, and drizzle with extra BBQ sauce to serve.
