Simple Strawberry Jalapeno Salsa

Oh mama! This recipe is a winner. It’s light and refreshing with so much flavor!
It’s vibrant and beautiful, too! So simple to make that there’s really no excuse not to make it.
Since strawberries are 100% in season throughout the East and West Coasts of the US, you’re in for a real treat. With ripe strawberries, freshly picked, this dish balances perfectly sweet strawberries with a bit of tang from the lime and vinegar and then adds a bit of spice from the jalapeno. It’s just such a fun dish, I’m so glad I tried it out! Thank you to Gimme Some Oven for the recipe idea!
This salsa is wonderful on sweet potato chips, burgers, grilled chicken, a spoon… anything really.
I was lucky enough to be visiting my boyfriends’ family in Maine this past June when picking season was at its peak. We tried our picking hand at a local You-Pick farm with amazing results. We ended up taking home 10 pounds of strawberries for only $20. Um… if anyone reading this is from California and knows the insane prices we pay for strawberries that are probably not even local, they’ll know how I feel about this. I’m STILL in shock!
The You-Pick farm things is SO AWESOME. I was in heaven frolicking among the rows of berries. Totally in my element, I probably ate just as many strawberries as I picked. But shhhhhhh! Don’t tell anyone at the farm that one. It’ll be our little secret. 😉
Anyway, here’s the recipe! Go forth and make this!
Simple Strawberry Jalapeno Salsa
- 1 pint strawberries, strem removed and finely diced
- 1 jalapeno, stem and half the seeds removed, finely diced
- 1/2 small red onion, finely diced (about 1/2 cup)
- 2/3 cup finely-chopped fresh cilantro
- 1 lime, juiced, about 2+ tablespoons
- 1 tbsp white vinegar (optional for more tang)
- Salt and black pepper, to taste
Directions:
Combine all of the ingredients together in a large bowl. Season to your liking with salt and pepper, tasting and adjusting, as needed.
If you have time, allow salsa to sit for an hour before serving for the flavors to meld and expand. If not, no worries, it’ll still be devoured.
